My ultimate goal is to have a traditional 3-bay compost bin system, but in the meantime I tried Bokashi out (from a neighbor via FB marketplace!). It uses bokashi bran to pickle the organic matters (maybe that's not the right term, but the resulting food waste smells like pickles), and this is an anaerobic composting process. I like that you can bury the fermented matter and it literally turns into soil in a matter of days.
And one day when I do have a compost bay, I can add to the pile. This works for kitchen scraps, but also dairy, meats, and other foods that are not traditionally recommended (which sadly is a lot of my food waste).
